BEEF BONES ON THE BANDSAW!
Not long ago we received a huge delivery of beef bones.
Hundreds of pounds.
A spring cleaning of the freezer by Jeremy Peele of Herondale Farm.
Steve and Tony set to zipping them in half, into quarters, into pieces as small as they could without zipping off their fingers with the screaming blade of the most dangerous tool in the restaurant: The Bandsaw.
Slippery bones, razor sharp blade, blood and marrow. Shavings flying.
All this for dinner.
Hypnotized, running mundane errands on a dreary, drizzly day, listening to the drone of Nathan Shineywater’s Library of Sands, an image of the bones running through the saw looped in my head. What do you do for good food?
